Design Considerations for the Complex Waste Streams of Wineries

Complexity is a term often used in tasting rooms to describe a fine wine, although little thought and understanding is given to the complexity of treating winery wastewater. It is vital to understand not only the nature of winery wastewater, but the by-products produced during the winemaking process, such as juice acidity, lees, and cleaning agents that dictate the various constituents and concentrations encountered. Beyond the romanticized season of harvest and the demands created by crush, other activities that generate wastewater throughout the year include barrel washing, fermentation tank washing, and equipment cleaning from racking and bottling operations.

There are several factors to consider in all winery wastewater treatment system projects. Determining the actual wastewater flows during crush (the highest wastewater generating operation at a winery) can be challenging. These flows are based on industry experience, regulatory agency calculations, as well as input and data from the winery itself. Misjudging the maximum design flow and pollutant concentrations can be devastating to a winery treatment system. However, oversizing a system can equally create functional problems and add unnecessary cost. A winery wastewater treatment system should have the flexibility to handle the high and low flows and loads. Most successful winery wastewater treatment systems include proper primary screening, a robust active aeration system followed by a clarifier, or membrane barrier to separate the treated effluent from the biological process. Additional key considerations include proper sizing and material selection of the treatment tanks to provide required biological retention time, surge capacity and sludge storage capability.

It is Vital to Understand the Nature of Winery Wastewater

Beyond the romanticized season of harvest, the labor demands and various vineyard activities creates a “complex” wastewater stream from crush, barrel washing, fermentation tank washing, and equipment cleaning to racking and bottling operations.  Although the term “Complexity” is often used in tasting rooms to describe a fine wine, the resulting winery wastewater produced throughout the year needs addressing and understanding as well, including an explanation of the by-products produced during the wine making process, such as juice acidity, lees, and cleaning agents that dictate the various constituents and concentrations encountered.

Winery Wastewater is higher in strength and requires better treatment technologies

In the case of a typical septic system, the strength of the wastewater can vary tremendously depending on usage, garbage disposals, dishwashers, etc.; and is, in actuality, a pretty loose estimate.  This can be mitigated by using an aerobic treatment unit, instead of a septic tank; as long as the ATU is sized properly, working, serviced (including sludge management and pumping), and isn't killed off by the use of strong cleaners with a large concentration of quaternary ammonia compounds. 

Unlike residential wastewater, winery wastewater usually does not contain pathogenic bacteria in the waste stream; however, Biochemical Oxygen Demand (BOD) and Total Suspended Solids (TSS) are found in significantly higher concentrations. In fact, BOD and TSS concentrations can be forty times as high as household wastewater with 12,000 mg/L BOD and 6,000 mg/L TSS typical during harvest activities. At other times of the year, the various winemaking activities create fluctuating flows, which create system over-capacity concerns. A conventional soil-based technology must allow the BOD5 to be spread out evenly; otherwise, the soil will clog with anaerobic slime. With an ultrafiltration membrane and NSF 350 certified system, the resulting effluent is water; and therefore, has permeability rate with a much wider range.The need for versatility in design and operation is key in selecting a winery wastewater treatment system.

Using aerobic MBR treatment units, pressure dosed fields, and/or drip irrigation, understanding the complex winery wastewater becomes a simple solution. 

Why should sizing a system using the NSF/ANSI Standard 350 certification be considered?

The NSF/ANSI Standard 350 certification is a third-party test for onsite wastewater treatment systems that meet a pass/fail criteria of 10 mg/l of CBOD5 and TSS. Turbidity of less than 5 NTU and E. In 2014, the California Plumbing Code and IgCC Plumbing Code both reference NSF 350 for water reuse.  The 2015 ICC and UPC are expected to reference NSF 350 for water reuse as well.  Based on these changes in the plumbing code, NSF certified products should be considered for all water reuse applications.

NSF 350 is a water (health) standard, not a wastewater treatment standard. For example, the system currently certified to that standard had test results that were non-detectable CBOD5 and TSS. Turbidity of 0.25 NTU and E. Coli of 1.3 MPN/100 ml.  There are a few molecules of pollution and a few parts per million of nutrients, but basically, it becomes water down to the error rate of laboratory tests. Also, it's free of bacteria, parasites, and most viruses.

James A. Bell, M.S. - Executive Vice-President, Bio-Microbics, Inc. 20 Years of Bio-Microbics Fixed Integrated Treatment Technologies

Bio-Microbics was established on April 18, 1996, to manufacture FAST wastewater treatment systems for single family homes. Thus, its first product was the SingleHomeFAST System available in only one model size. From one person (the president, Robert (Bob) J. Rebori) and this one product, Bio-Microbics quickly gained four more people and moved into a 5,400-square-foot office space in Lenexa, Kansas. By the end of 1996, Bio-Microbics introduced two products with three sizes (MicroFAST 0.5, 0.9, and HighStrengthFAST 1.0) and did away with the very limiting name of SingleHomeFAST in favor of more fitting product names for commercial applications and retrofitting projects. During this same time, SeptiTech was founded with their own trickling filter system for treating wastewater, now known as the SeptiTech STAAR Filter System.

In August 1999, Bio-Microbics purchased 4 acres in Shawnee, Kansas, and began construction of the 47,000-square-foot warehouse, which currently stands as the global headquarters for Bio-Microbics. With adding newer, larger systems such as MyFAST, Bio-Microbics has outgrown this facility and has actively looked to double or even triple the facility.

As the Bio-Microbics MicroFAST and HighStrengthFAST grew in model sizes and treatment options, it has introduced a total of four wastewater treatment technologies — submerged fixed-film, trickling filter, extended aeration and membrane bioreactors; three stormwater technologies — pre-engineered filtration, litter control screening and linear rainwater filtration for impervious surfaces; multiple aeration and screening devices; advancing brinemaker and sodium hypochlorite generator technologies; as well as introducing a line of environmentally friendly, biodegradable cleaners, laundry detergents and maintenance tablets.

The facilities have gone under major renovations (a few employees refer to this period as the “Great Flood,” when the small drinking fountain in the main hallway broke overnight and prompted a change of carpet, new office structure and updating some office equipment). It was a struggle and inconvenience, but the Bio-Microbics employees persevered and worked as a team to get through it. During the past 20 years, many employees have experienced personal and professional achievements that were all celebrated, as have the Bio-Microbics technologies and company as a whole.
