Cut and Cover Wine Caves is a division of Countryside Creations Inc., a Northern California premier project management and construction company that delivers unique custom projects and has been serving local communities with quality service for over 20 years. We handle wide array of construction projects that include landscaping creations, pools and Wine Caves.

Mark has been involved in a wide variety of projects throughout the West Coast and Hawaii. Through these experiences, he has learned and developed cutting edge techniques that utilize the latest technology, as well as green and sustainable materials. Mark has training and experience in foundations, soil retention systems, structural retaining walls, landscaping with facades and themes, even building miniature golf courses. His career in the construction began at the age of 14, digging trenches for storm drains, rough-in plumbing, and building trails. Later, as an apprentice, he painted residences, commercial buildings, and industrial steel. His apprenticeship also included demolition and remodeling of commercial restaurants and residential estates.

Our universal and innovative pre-cast modular subterranean structure cave systems allow you to maximize the potential of your winery, residential estate, or subterranean home. CC Wine Caves offers a superior building system with a heavily insulated concrete structure. This system is a durable option that yields a higher aesthetic value. We can construct these systems in a variety of architectural styles including Mediterranean, South Western, Tuscan, or contemporary.

 

By using materials made from recycled polystyrene and concrete, our above ground building system delivers safe, durable, high quality results while achieving shorter project timelines and reducing overall maintenance cost. We can help you through the entire process from design, planning, permits, and cost comparisons through construction. In addition to our concrete structures, CC Wine Caves' parent company Countryside Creations Inc. also offers premium steel building construction. You can choose from a variety of finishes, and create your project in phases as needed.

OPTIMIZE STORAGE

A consistent temperature range (55°F -60°F) provides optimum year round conditions for aging and storing your wine, also ideal for storing used barrels without drying them out. Surface warehouses require energy to cool, heat and humidify, while also taking up precious winery space.
 

LOWER PRODUCT EVAPORATION

High humidity minimizes evaporation. Humidity in a wine cave is naturally 70-90%. In comparison to a surface warehouse, a wine cave will reduce the average evaporation during storage from four gallons per sixty gallon barrel per year, down to one gallon per barrel per year!

Red Wines- A humidity level of 75% is ideal for red wine aging and barrel storage. With the average red wine being barrel aged⤨ for two years, this represents a 10% gross volume loss difference.

White Wines- A humidity level of 85% or higher is ideal for white wines for aging and barrel storage. The average white wine "barrel is aged for one year, representing a 5% gross volume loss difference

In short, reduced evaporation means increased profits.

 
SITE UTILIZATION

Above ground storage warehouses take up a large amount of land space, while underground installation frees valuable surface area available for multiple uses (vineyard, parking, gardens, park area, etc.) Also, in much of California, many land use restrictions which may hamper surface construction, do not apply to underground construction.
