New Product Launch: World Cooperage Expands Infrared Barrel Options with Addition of Dimension Barrel
22 February, 2016

Cooperages 1912 is expanding their World Cooperage Profile Series with the development of the Dimension barrel. Dimension is the third barrel to be launched in the series utilizing infrared technology.  

“Our infrared technology was introduced in 2012 with two barrels– Aroma and Reflection,” said Elizabeth Van Emst, general manager. “We wanted to expand the series by launching a new infrared toasted barrel focused on texture and length as well as complexity of flavors and aromas.  We unlocked the key to finding texture by utilizing contour stave technology. In addition to texture, Dimension offers layered aromatics of rich vanillan and toast and a prolonged, velvety finish.”

With contour stave technology, three-dimensional waves run across the interior surface of the staves. These waves create additional surface area and when combined with infrared technology, offer new flavor profiles. The infrared technology toasts the tops of the waves more quickly and deeply than the bottoms of the waves. The gradient change of the stave toasting creates more flavor complexity.

“The surface area is increased by 20.4 percent in this barrel,” said David Llodrá, research and development director. “As a result, there is a higher impact of aromatics than when regular staves with a smooth surface are toasted. We also developed a proprietary combination of wavelengths to specifically complement the contour staves. This toast and stave pairing makes an ideal barrel for Chardonnay fermentation and red varietals seeking more texture.”

Dimension profile has been in development and production scale experiments for over four years. It is immediately available, and recently launched at the 2016 Unified Wine & Grape Symposium.

New Product Launch: World Cooperage Introduces Infrared Toasted Barrels to its Profile Series

NAPA, Calif. (February 12, 2014) – Cooperages 1912 is expanding the World Cooperage Profile Seriesto include new barrel profiles created using custom infrared technology.

“World Cooperage has long been known for pioneering the concept and technology behind Barrel Profiling, which centers on creating diverse, definable flavor profiles for fire-toasted barrels with guaranteed repeatability,” said Elizabeth Van Emst, general manager. “Now we are taking this same concept and applying it to infrared technology to further expand the flavor combinations that are possible.”

Each infrared profile is created using targeted combinations of wavelengths in the electromagnetic spectrum to highlight different flavors and textures.

“Our infrared toasting system involves state of the art technology fully customized by our engineering team to ensure accuracy,” said David Llodrá, research and development director. “As a result, the infrared profiles are extremely precise, offer clean flavors, and explore new combinations of aromas and flavors not previously available to winemakers.”

After research and experimentation in-house, as well as multiple production-scale trials, Cooperages 1912 is now offering two infrared toasts: Aroma Profile and Reflection Profile. The Aroma Profile offers a full spectrum of oak aromatics to accent forward fruit characters and richness on the mid palate.  Meanwhile, the Reflection Profile is designed to serve as a reflection of the fruit, as the name implies, lifting and enhancing fruit character with mild oak and light aromatics.

T.W. Boswell Introduces the Cool Climate Series, a New Line of Barrels Emphasizing Fruit & Terroir

NAPA, Calif. (August 6, 2013) – Cooperages 1912 is expanding the T.W. Boswell barrel collection to include three new barrels as part of a Cool Climates Series. This is in direct response to an increased focus in the wine industry on fruit-driven attributes as well as the continued growth of cool climate wines that evoke this style.

“Cool climate wines tend to be very fruit focused, with higher acidity and delicate overall tasting notes,” said Jason Stout, international sales director. “Our team researched and experimented to carefully develop a line of barrels that responds perfectly to this style.”

The low-impact barrels featured in the series are crafted exclusively with 36 month, extra fine grain oak as part of T.W. Boswell’s ‘Special Reserve’ premium wood selection.

“Our Special Reserve wood matches extremely well with the fruit-forward style many winemakers are currently seeking,” said Stout. “We select the finest grain oak to undergo extended aging, contributing to the elegant and refined character of these barrels.”

The Cool Climate Series is immediately available, launching in time for the 2013 harvest.

NAPA, Calif. (February 12, 2013) – Cooperages 1912 Napa is pleased to announce the promotion of Elizabeth Van Emst to West Coast Operations Manager, a newly created position.  Van Emst will manage the company’s Napa office and warehouse, overseeing the significant activity and inventory routed through this location. 

“It is important to us to maintain a high level of overall service and efficiency as we continue to grow,” said Jason Stout, International Sales Director. “Elizabeth has been a valuable team member since 2008, working to support sales throughout California and Oregon, and she is the perfect choice to take on this new role.”

As part of the company’s mission to provide leading customer service, Cooperages 1912 Napa has also created a dedicated customer service department serving customers in California and throughout North America. Van Emst will manage the team and department responsibilities, including order facilitation, delivery coordination, and assistance with pricing and product inquiries.

Cooperages 1912 & Oak Solutions Group Introduce New 'Product Innovation' Division

NAPA, Calif. (April 24, 2012) – To fortify their position as the industry’s innovation leaders, Cooperages 1912 and Oak Solutions Group are pleased to introduce their new Product Innovation Division.  This division will focus exclusively on the development and refinement of oak barrels, oak alternatives and enological tannins.

“Innovation has always been a core value in our family business,” said Brad Boswell, president and fourth-generation cooper.  “This is a brand new division whose sole function is to create, think outside the box, listen to what customers need, and then develop new products that push our industry forward.”

The Product Innovation Division will work closely with the company’s Engineering team and Research & Development Division, which have been in place for many years.

Ed Larmie, who has served as Director of Sales for Oak Solutions Group since the company’s inception, is taking on a new role as Director of Product Innovation. 

“For years, Ed has been actively involved in product development for our organization thanks to his expertise, practical approach and creativity,” said Boswell. “Ed is the perfect person to head up this new division.”

Larmie will direct a full-time staff and oversee the company’s new winery and laboratory dedicated to small-scale experiments and bench trials.

Cooperages 1912 Introduces Fusion Designer Barrels

Cooperages 1912 is launching a dynamic new line of hybrid wine barrels.  An evolution in “barrel blending,” Fusion Designer Barrels makes it possible for winemakers to combine their favorite attributes of French, European and American oak into a custom barrel tailored to the winery’s needs.

“Most winemakers are currently using a mix of barrels in their wine programs to build complexity,” said Jason Stout, International Sales Director. “We see this as an opportunity to tailor a barrel to the precise style you are looking for from the start.”

To design a Fusion barrel, a winemaker first chooses a desired blend by percentage level of French, European and American oak.

“Each of these oak types offers a unique contribution to wine,” said Stout. “Fusion Designer Barrels builds on the individual strengths of these wood types by melding the three together to yield a complex end result.”

Next, the barrel designer selects a preferred level of grain tightness, duration of seasoning and toasting style. Laser branding can also be customized to further personalize the barrel.

“The result is a 100 percent tailor-made barrel,” said Stout. “For many wineries, this could be an opportunity to create a sophisticated core barrel to serve as a foundation for your wine program.”

T.W. Boswell Elevates its Standard of Excellence, Introduces Cutting Edge Technology and Unique Certificate of Quality for Individual Barrels

NAPA, Calif. (January 2012) – Cooperages 1912 is pushing its standards for the T.W. Boswell barrel line to a new level of excellence, a decision linked to the company’s continuing pursuit of meticulous standards, full transparency and guaranteed consistency.   

 “One of our ongoing goals as a company is to research ways we can achieve a higher and higher standard,” said Brad Boswell, company President. “As part of this effort, our team has introduced groundbreaking ‘Grain Recognition Technology’ (GRT) that scans and records the growth rings of every stave. GRT allows us to guarantee every barrel we cooper has a number of growth rings that falls within a predetermined range.”

To complement this new technology, each T.W. Boswell barrel will be branded with a “Certificate of Quality” providing critical information that influences the barrel’s organoleptic profile. Information on the certificate will include actual “growth rings per inch,” certified wood origin, location and duration of natural seasoning, and unique toasting metrics.

 “We are pleased to be introducing this new technology and elevated standards in the same year as our company’s 100 year anniversary,” said Boswell. “It’s an excellent way for us to honor four generations of coopering expertise while keeping an eye to the future.”

T.W. Boswell Eau barrel proceeds provide ongoing support for Save The Bay

NAPA, Calif. (August 31, 2011) – Cooperages 1912 is proud to announce its continued support of Save The Bay, a nonprofit working exclusively to protect, restore and celebrate San Francisco Bay.

After introducing the Eau (French for “water”) wine barrel to its T.W. Boswell collection in 2006, Cooperages 1912 began donating a percentage of the proceeds from annual T.W. Boswell Eau barrel sales to support Save The Bay’s efforts. This year’s donation for 2010 sales brought the grand total to $12,500.

“The Eaubarrel provides an excellent opportunity to raise awareness about sustainability and ultimately give back to a water-related cause,” said Jason Stout, international sales director. “Save The Bay embodies both of these goals with its ongoing determination to protect the San Francisco Bay. We congratulate Save The Bay on their achievements over the past 50 years.”

Barrel Care


We know you are excited to fill your new barrels and our goal is your complete satisfaction with our products. We urge you to take the time to review the tips below for getting the best results.

Initial Inspection

We recommend examining and nosing the inside of each barrel upon delivery.

Preparation for Wine: A Water Soak & Test
It is important to follow these re-hydration and inspection steps when you are going to fill the barrel immediately with wine.

Option 1:

  1. Fill the barrel with 3-5 gallons of filtered, chlorine-free, hot water. Use the hottest water possible, with   180°F or 82°C the ideal temperature.
  2. Place a silicone bung in bunghole.
  3. Rotate the barrel from side to side, completely wetting the barrel's interior.
  4. Stand the barrel upright on one head up to 4 hours to completely hydrate the head.
  5. Rotate and stand upright on the other head up to 4 hours repeating the hydration
  6. Check for leakage. See instructions below if present.
  7. Empty the barrel and allow it to drain and dry completely (approximately 1 hour).

Option 2 (Cold Water/High Volume):

  1. Completely fill the barrel with filtered, chlorine-free, cold water.
  2. Let the barrel re-hydrate for 24 to 48 hours.
  3. Check for leakage. See instructions below if present.
  4. Empty the barrel and allow it to drain and dry completely (approximately 1 hour).

Check for Leakage

  1. If leakage is present, drain the barrel and allow it to dry completely (approximately 1 hour).
  2. With chalk, circle the area where the leakage was present. Examine that this exterior area is completely dry.   
  3. Repeat Option 1 or Option 2 above and re-examine for leakage.

If the leakage continues, it is important to call your account manager or Cooperages 1912 immediately. Empty the barrel, allow it to drain and dry completely, treat each barrel with 10-20 grams of sulfur sticks (or the equivalent in gas form), and re-insert the bung. Again, be certain the barrel is completely dry prior to sulfur treatment.

Remember that water should not sit in a barrel for more than 48 hours without sulfur and citric acid. Also, use caution when removing bung due to internal pressure build-up

Storage of New Barrels
: Cool, Humid Environment
We recommend that you keep the plastic film on the barrels if you are storing the new barrels for an indefinite time period. Please remember a new barrel must be stored in a cool, humid environment at your winery to maintain its integrity.

Empty Storage of Previously Filled Barrels: Cleaning and Storing between Wine Fills

  1. Barrels must be thoroughly rinsed with water until the draining water is clear.
  2. Completely dry by placing the bunghole down and draining the water.
  3. Apply 10-20 grams of sulfur sticks (or the equivalent in gas form) to prevent microbial growth.
  4. Tightly insert a silicon bung.
  5. Continue storing the barrel in a cool, humid environment.
  6. Repeat the sulfur treatment monthly for extended storage of empty barrels.
  7. Complete Option 1 or 2 above for barrel preparation prior to refilling with wine.
