PRONEKTAR FERMENTATION OAK

FERMENTATION OAK: whether you are battling smoke taint or just want to give your wines an edge on oak aging and tannin integration.


Pronektar offers a full range of products in American and French oak (granulates, chips, tank and barrel staves, inserts, segments and blocks).

The two items specifically developed for fermentation are:


  • NEKTAR FRESH - dry, un-toasted 100% French oak granulates
  • DUO FRESH - a special blend of toasted and un-toasted 100% French oak granulates 


Both products are made from carefully selected cooperage grade oak that is naturally seasoned and then analyzed by Oakscan®, a unique process developed by Radoux cooperage to select oak by its tannin content. This meticulous approach ensures homogeneity and reproducibility of results obtained when using these products in winemaking.


SMOKE TAINT: We are receiving a lot of inquiries about the use of oak in response to smoke taint. While there is no guaranteed treatment for smoke taint in grapes, studies conducted at UC Davis have shown that the application of un-toasted oak granulates during fermentation can reduce the aromatic effects.

NEKTAR FRESH

 

Nektar FreshObjective: bring structure and sweetness, stabilize the color and protect the must during vinification.

 

  • 100% un-toasted, French oak granulates for vinification.
  • Barrel quality oak, natural aging in the wood yard, Oakscan® selection of wood with high content of ellagitannins, dehydrated before packing. Unique product on the market, highly concentrated.
  • Enhances the fruit character and softens the vegetal characteristics without adding any oak aroma. 
  • Brings structure, volume, sweetness.
  • Early stabilization of color, protection against oxidation.
  • Packaged in 22 lb. bag, box pallet of 660 lbs. (30 bags).

DUO FRESH


Duo FreshObjective: benefit from the oenological advantages of fresh wood (Nektar Fresh), while obtaining a more mature and softer profile.


  • Un-toasted and toasted, French oak granulates for vinification, a specific recipe developed by Pronektar's R&D team.
  • Barrel quality oak, natural aging in the wood yard, Oakscan® selection of wood with high content of ellagitannins, dehydrated before packing. Unique product on the market, highly concentrated.
  • More mature, complex fruit profile, better impact on the masking of vegetal and grassy character.
  • Early stabilization of color, protection against oxidation.
  • Higher contribution of volume and sweetness. 
  • Softening of harsh and astringent tannins linked to lack of fruit maturity.
  • Packaged in 22 lb. bag, carton box of 2 bags, pallet of 24 boxes (48 bags).
