Another route is to premiumize their brands to rise above the fray and appeal to confirmed oenophiles with white glove winemaking and customer service. The other turn along the price path is to downgrade to a more affordable price to attract shoppers who are increasingly price-conscious in this economy.

Chris HollingsworthChris Hollingsworth, General Manager at Punchdown Cellars in Santa Rosa, outlines three reasons a winery might choose a custom crush facility like the one he runs. “An established brand might want to change facilities to take advantage of state-of-the-art equipment and an experienced team that can follow detailed instructions to create a series of complex blends. A large production winery might need additional capacity after it buys new brands but wants to avoid putting capital into new equipment or additional production lines. Or a vineyard owner who doesn't have their fruit contracted might need a place to crush and produce bulk wine to sell before the next vintage.”

“Punchdown is almost an incubator for winemakers and wine careers, which makes it a special place,” Huffine adds. “I started my career as an intern at Punchdown Cellars 17 years ago. When I started my own winery, I experimented with 4 or 5 other cellars before realizing it was time to come home, back to Punchdown Cellars. When I took over LIOCO winemaking 8 years ago, I knew there was only one Custom Crush that I not only wanted to make these wines but actually could make these wines.”
Ashley Holland, Owner & Winemaker at Read Holland Wines AH Wine Consulting, agrees. “I've been making wine at Punchdown since 2017, and it's become home base for me and many of my clients. I love that I can work independently while also relying on the skilled and supportive team, who are instrumental in every stage of the winemaking process. Hollingsworth explains why his team makes a difference, “Our employees have been here for a long time—they know the facility, and they know their job. Many smaller ultra-premium winemakers and owners want to tweak how the wine is produced to keep their story cohesive. Our staff works with them and can follow a complex work order like breaking down a 60-gallon barrel into four different gallon components and spreading those to other blends.”

Punchdown Cellars is a premium custom crush facility located in Santa Rosa, the heart of Sonoma County, California. Our 40+ client wineries focus on producing top quality, small lot wines. Together we produce world-class expressions of a wide array of varietals from all over California and focus on quality over quantity. We are looking for people who are passionate about wine, have a positive attitude, are detail oriented, enjoy learning new things, and are willing to work hard. Interns will assist in all facets of harvest work including cleaning and sanitizing equipment, sorting fruit, punchdowns and pumpovers, making additions and managing fermentations according to winemaker instructions, wine movements and barrel work, and other winery-related tasks.
Having multiple wineries under our roof, Punchdown offers a truly unique and exciting harvest internship experience. Interns will get the opportunity to work closely with multiple winemakers, ask questions, and see how the decisions made affect the ultimate style of the finished wines. We take pride in Punchdown being a great place to work vintage and want our team to have a safe, fun, and fulfilling harvest experience. The opportunity to gain valuable winemaking knowledge is here for you to take advantage of. Many of our interns have gone on to work full-time with our clients here. Job Summary
We are seeking an experienced and energetic cellar worker to join our year-round production team. The cellar worker will report to the production manager and will be responsible for carrying out work orders as instructed. Work will encompass all cellar activities allowing employees to acquire a broad range of wine production skills. A positive attitude, strong work ethic, and attention to detail are essential for our team’s success.
Duties and Responsibilities
Wine transfers and movements
Barrel work: topping, filling, maintaining, etc.
Wine additions: SO2, fining agents, inoculations etc.
Sampling
Cleaning tanks and equipment
General maintenance
Maintaining a safe working environment
Qualifications
Must be able to lift 50 lbs.
Strong verbal and written communication skills
Understanding of basic English and Spanish
Experience with basic math

State Digest - A separate Digest has been prepared for every state and the District of Columbia. States that have both state-controlled business and private-sector business (through wholesalers) are further divided into two Digests — a “Control” Digest and an “Open” Digest (for example, Oregon Control and Oregon Open). Similarly, states that conduct only state-controlled business are labeled as a “Control” Digest (for example, New Hampshire Control).
The individual state Digests cover a wealth of practical information, beginning with contact data for each applicable regulatory agency — the mailing, street, and internet address(es), as well as phone and fax number(s). Each state Digest is organized in a standardized, easy-to-follow format. Its information is divided into seventeen major sections and numerous subsections (which can vary by state). Refer to the "Outline of State Digest Information" below for an explanation of these primary divisions.
Legal citations are included with the relevant text, not in a separate footnote or listing. These references enable you or your legal counsel to locate the necessary statutory or regulatory data quickly and easily when you want to review the regulatory sources in their entirety.
Requirements by State - Tables providing “at a glance” summary information on each state’s requirements. One table is provided for Suppliers selling through the wholesale channel and includes licensing, bond, and sales license requirements, as well as label registration, price posting, monopoly protection, and reporting. The other table is for companies shipping Direct to Consumer and includes licensing, bond, and tax registration requirements as well as sales and excise tax reporting, label registration, wine of own production, and shipping limits.
Control States - A listing of all “control” states, with an explanation of what commodities are covered and how business is conducted in each particular state that operates a control system.
Direct Shipments of Alcoholic Beverages (to Consumers and/or Retail Licensees) - A state-by-state compilation of information on shipping alcoholic beverages direct to residents and/or retail licensees in the listed states. Qualifications for licensing, protocols for shipping, tax returns and reports to be submitted, and all legal requirements are covered in detail. A few states permit the direct shipment of distilled spirits and/or malt beverages in addition to wine. This listing also includes available information on felony prosecutions and penalties for those states that do not permit direct shipments to consumers.

History
The Digest of Wine & Spirits Law was founded in 1991 by Mary Kramer of M. J. Kramer & Associates. Since Mary's retirement in 2018, the service has been carried on by Compliance Service of America, (CSA), a long time subscriber of The Digest.
CSA has specialized in alcoholic beverage regulation and licensing since 1983. A fully staffed compliance firm, CSA brings to The Digest a wealth of expertise and experience in explaining complicated regulations in plain English.
