A Natural Treatment to Protect Organic Wine from Oxidation

The global organic wine market is expected to reach $21.5 billion by 2030, according to a recent report by Grand View Research, Inc. One of the main challenges winemakers face with organic wines, of course, is that without being able to add sulfites to the wine they face the risk of oxidation. The Epyca line of 100% organic wine treatments helps winemakers produce stable wines protected against oxidation without the use of added sulfites. Three kits are available depending on wine and winemaking style: the Epyca Red Kit, the Epyca White Kit, and the Epyca White ML-stop Kit.

THE EPYCA RED KIT

Epyca Red is a natural treatment, made with tannin from grape seed extracts for the production of red wines without added sulfites, integrating easily into traditional red winemaking protocols. It provides protection against oxidation and rapid stabilization of aroma and color in must and wine, preserving the aromatic and polyphenolic content of the grapes. The result is the production of stable, long-lived red wines even when sulfite addition is not an option.

The Epyca Red Kit consists of 3 different synergistic formulations to be used sequentially:

  • Epyca 1 Red is used for the fermentation of musts. It protects against oxidation and enhances the activity of the yeast. It is to be used in the must prior to inoculation of selected yeasts or the onset of native yeast fermentation.
  • Epyca 2 Red is used during wine aging and is characterized by its high balancing and stabilizing power. It refines the expression of organoleptic components and improves the stability of the wine. For optimal results, Epyca 2 Red should be used at the end of malolactic fermentation and after filtration.
  • Epyca 3 Red is to be used prior to bottling, further enhancing the longevity of the wine in bottle.

THE EPYCA WHITE KIT

Epyca White is a natural treatment, made with tannin from grape seed extracts, for the production of white and rosé wines without added sulfites, integrating easily into traditional winemaking protocols. It provides protection against oxidation and a rapid stabilization of aromatics and color in must and wine. The result is the production of stable, long-lived white and rosé wines even when sulfite addition is not an option.

The Epyca White Kit consists of 3 different formulations to be used sequentially and synergistically when making wine without addition of sulfites:

  • Epyca 1 White is used at the juice stage. It protects against oxidation and enhances the activity of the yeasts. It is to be used in the must prior to inoculation of selected yeasts or the onset of native yeast fermentation.
  • Epyca 2 White is used during wine aging and is characterized by its high balancing and stabilizing power. It refines the expression of organoleptic components and improves the stability of the wine. Its optimal use is at the end of malolactic fermentation after eventual filtration.
  • Epyca 3 White is to be used prior to bottling before final filtration, further enhancing the longevity of the wine in bottle.

THE EPYCA WHITE ML-STOP KIT

Epyca White ML-Stop is a natural treatment, made with tannin from grape seed extracts, for the production of white and rosé wines in absence of malolactic fermentation without added sulfites, integrating easily into traditional winemaking protocols. It provides protection against oxidation and a rapid stabilization of aromatics and color in must and wine. The result is the production of stable, long-lived white and rosé wines even when sulfite addition is not desired.

The Epyca White ML-Stop Kit consists of 4 different synergistic formulations to be used sequentially when making wine without addition of sulfites:

  • Epyca 1 White is used at the juice stage. It protects against oxidation and enhances the activity of the yeasts. It is to be used in the must prior to inoculation of selected yeasts or the onset of native yeast fermentation.
  • Epyca ML-Stop A+B is used at the end of the alcoholic fermentation to inhibit the start of malolactic fermentation.
  • Epyca 2 White is used during wine aging and is characterized by its high balancing and stabilizing power. It refines the expression of organoleptic components and improves the stability of the wine. Its optimal use is at the end of malolactic fermentation and after filtration.
  • Epyca 3 White is to be used prior to bottling before final sterile filtration, further enhancing the longevity of the wine in bottle.
