2B FermControl Active Dry Yeasts

VitiFerm BIO active dry yeasts are the first yeast strians in the world that have been selected from a bio-dynamic habitat and that are product by and exclusive procedure for yeasts.  Certified organic and completely free of chemicals and allergens, these strains have been selected because of their special psysiological abilities to enhance the varietal and terroir specific characteristics of the grapes.  They offer the unique combination of high fermentationsecurity and natural flavor diversity.   Low nutrient demands, native pectolytic activity.  No re-hydration nutrients needed!

• Alba Fria- Fruit and thiol driven white wines.  B-lyase activity.
• Pinot Alba- Barrel fermented whites.  High glycerol production and fastautolysis.   Low sugar conversion.
• Rubino Extra- Fruit driven and color sensitive reds.  Native xylase activity.  High alcohol tolerance (+17%)
• Sauvage- Sacc. uvarum species.  All white and red wines.  High glucosidase activity.
• Esprit- Terpene driven aromatic white wines.  Very high glucosidase activity.  Moderate SO2 production.
• Vulcano-  The FIRST dried combo of Sacc. cerevisiae and Pichiakluyveri.   All white and red wines.  Espressive thiols and long chain esters.  B-glucosidase activity.
