If after about four months your canned wine smells like rotten eggs, according to Cornell University researchers sulphur dioxide (SO2) might be the culprit.
SO2 is added as an antioxidant and an antimicrobial to the wine. Although canned wine has an ultra-thin coating inside the can to keep the wine and aluminum separate, if it sits for a long time, the coating can break down and the SO2 interacts with the aluminum causing the rotten egg smell.
Not exactly a sophisticated look!
What can wineries do?
In the Decanter article, the Cornell University researchers found that maintaining 0.4 ppm of SO2 in wine and using epoxy liners could allow cans to have a shelf life of up to eight months.
For wine consumers:
White wines tend to have this issue more than red so when buying canned wines that are going to sit for more than a few months, opt for the red wines.
This may become a moot issue if Sacks and Goddard, the professors who conducted this study, have their way. They have teamed up with the US Department of Agriculture to design liners using food-grade materials. Can’t wait!
