Stabilizes wine tartarically to help prevent potassium bitartrate crystal precipitation.

Della Toffola’s DTX is a tartaric stabilization and pH-reduction system for wine that uses regenerable cation-exchange resins in an acid cycle, typically with sulfuric acid for resin regeneration. As wine passes through the resin vessels, potassium is gradually reduced; the outlet pH is monitored to reach the desired stabilization level.
