Pulsair Systems officially releases the portable TM-1501W Kit for any winemakers who ferments in small barrels and 1-2 ton tank bins. The wine air mixing process from Pulsair is an easy-to-use, all-pneumatic process that allows winemakers to quickly incorporate fermenting red wine juice up into the buoyant grape cap. Sometimes referred to as a ‘reverse punch-down’, large compressed air bubbles are sequentially release under the cap to initiate the mixing. The big bubbles pull the wine juice up into, through and over the top of the cap to break up the cap into individually berries and immerse the skins in the juice. By completely mixing the tank using Pulsair, punch-down could still then potentially be used if desired, making that process ten times easier after using Pulsair first.
The Pulsair wine air mixing process helps to improve extraction of skin tannins, phenolics, bind colors and release odorous, reductive smells, CO2 gas and heat. The result is a healthy, fresh smelling ferment with more fruit forward flavors and less reductive aromatic. This innovative and proven air mixing process for efficiently managing red grape skin caps during primary wine fermentation and wine blending is used all over the world by hundred of winemakers to make better tasting wines.
This efficient wine cap air mixing technique works by sequentially pulsing large bubbles of compressed air or gas near the bottom of the fermentation tank. The rising bubbles provide uniform temperature, keep yeasts healthy, and efficiently wet the cap to enhance the extraction of flavor, tannins and color into the juice.
