It’s the diamond of the cellar, fermentation tanks!
After 8 months of the farmers taking immense care of growing the grapes, the cellar team gets to work. Once the grapes have gone through cleaning, crushing, destemming and all the pre-work before fermentation it’s time to make the wine.
Just like diamonds, the grapes are put into a fermentation tank under different pressures, temperatures, and mixed with additives to create wine. Without the tank or some sort of vessel to ferment, we wouldn’t be able to create the magic that is wine. Due to the extensive contact time between the tank and the wine, taking care of the tank is extremely important. The growth of bacteria, yeasts, and contaminants can drastically change the balance in the wine. It can change the aromas, the taste, and the overall finish of the wine. So, the cleanliness and sanitizing of these tanks goes hand in hand with the quality of the final product you create. These days consistency and cleanliness are key, and wine is one of the many factors that get many of us through life!
