Tips for pre-fermentation treatment of white wine

When making white wines, an ounce of prevention really is worth a pound of cure. With any fining process, winemakers must balance the removal of negative characteristics with the inevitable removal of positive ones. Unlike the fining of finished wines, where the flavors and aromatics are set, with juice fining pre-fermentation you are making necessary preventative adjustments before the yeast do their job of driving style. The result is improved aromatics, flavor, and overall quality in your finished wines with a significant reduction in the need for future intervention. This is especially true for things you know you will likely have to deal with later, such as protein instability, astringency, and unwanted color; dealing with them in the juice is always the best option.

ATPGroup offers numerous options depending on your specific requirements, but a great place to start is with Phenol-Fine Plus NF. A blend of bentonite, PVPP, and casein, this simple-to-use and highly effective product targets oxidized and oxidizable polyphenols, reducing astringency and both the existing and potential for “browning” or “pinking.” The bentonite helps ensure rapid settling and reacts with unstable proteins, reducing the need for bentonite to heat-stabilize the finished wine. For those looking for vegetarian or non-allergenic options, ClarPure and ClarPT are potato-protein based and can be used in conjunction with PolyFilter® 10 PVPP and KWK or Krystal-Klear bentonite to ensure maximum effectiveness. To prevent unwanted microbial activity in juice, we offer Vin-Chito. This chitosan is highly effective at controlling populations of bacteria including lactobacillus and acetobacter as well as spoilage yeasts.

Juice fining options from ATPGroup can help maximize quality and minimize the need for later, more detrimental intervention. Contact your ATPGroup Specialist at (707) 836-6840 for help designing a protocol specific to your needs or visit www.ATPGroup.com for more information.
