Last year, Fior di Sole opened its doors to wineries lacking the capacity to produce some or all of their wines themselves. Fior di Sole runs four bottling lines for glass—three for still wine (100BPM, 160BPM, and 200BPM) and one for Charmat sparkling wine—and two lines for bag-in-box products, as well as two top-of-the-line packaging lines. These lines mean the company can bottle 25,000 standard cases of wine a day, which gives it plenty of room for new production requests from 1,200 cases to substantial lots.
Migotto explains Fior di Sole’s value: “When a winery’s production goes up, you need a structure in place to manage the inventory of dry goods, the wine, the blending of large lots, the filtration, everything that’s associated with the production. We have a lab capable of doing all the analysis required to bottle a wine successfully. We can conduct in-house microbiological testing, engineer a formula for a fruit-flavored or sparkling wine, and control the oxygen or amount of CO₂ dissolved during bottling. We assess each request as winemakers, and if we believe we cannot improve the wine, we will turn it down. We make the decision that is in the best interest of the quality of our customers’ wine.”
“I grew up in St. Helena,” adds Winetech Manager Ivan Ramirez, “so working with customers is like working with friends, and you’re always honest with friends.”
Winetech differentiates itself by having trained technicians on-site at all times, both to answer questions and to ensure machines are not left unattended. That way, if something goes wrong, like a membrane breaking, a technician is there to catch it quickly so it doesn’t compromise the entire batch. This approach also prevents over processing the wine, which can happen in a more automated method.
“Our technicians and operators are highly trained,” says Stefano. “They train with senior technicians or work in house at our winery before working with a customer. The same is true for the machines we build; we test them in-house before they go out. We want our customers to have as few surprises as possible.”

With California in the midst of harvest, many grape growers are wrestling with contracts -- trying to determine who will be honoring grape contracts this season and in what capacity. The Hennessey and Walbridge fires, both part of the larger LNU Lightning Complex, will most likely create far reaching monetary effects on premier fruit -- with many small growers ill-prepared to shoulder the financial burden.
What this means for many wine producers is that they will be facing critical choices for this harvest: (a) moving forward and producing potentially smoke-tainted wine (and utilizing more oak in programs to mask smoke-like aromas), (b) blending this wine into larger programs and lessening its profile, (c) bulking it out, or (d) foregoing this year’s harvest completely. There seems to be no easy choice but nonetheless, choices will need to be made -- imminently.
In previous years, wine producers have been creative with this potential pitfall, categorizing smoke taint as part of a natural occurrence – one that simply reflects that vintage’s conditions and adds an extra nuance among the multitude of flavor components. As smoke taint has become a less desirable characteristic to most consumers, however, this option is proving to be more difficult, if not impossible.

Winetech’s Smoke Taint Removal System uses loose RO to separate 4MG/G into the permeate stream. This permeate stream is then treated separately through ion-exchange resin columns, removing smoke taint without damaging pigmented retentate, which is responsible for wine’s complex characteristics. After treatment, the permeate is blended back into the retentate.

With rampant fires blazing through Northern California this summer, grapes from surrounding vineyards can lead to smoke-tainted wines with campfire aromas and bitter flavors. Winetech has a solution! By utilizing reverse osmosis technology, similar to the use of Reverse Osmosis in VA removal, the smoke taint removal system uses loose RO to seperate 4 MethlGuaiacol (4MG) and Guaiacol (G) into the permeate stream. This permeate stream is then treated separately through our ion exchange resin columns to remove Smoke Taint flavors without damaging pigmented retentate which contains the wines' complex characters.
