When barrel aging a wine you have many options to choose from when it comes to species of wood, where the wood is from, and toast levels. So when Steve Reynolds started working on Penta Tequila, he had the idea to experiment with some methods and ideas that weren't widely used in Tequila making as well as trying micro-oxygenation.
