Mr. Caldwell has over four years of experience in the field of specialized separation technology for wine production, and over seven years of experience in winemaking and wine chemistry, to include roles in France, Australia, and New Zealand. He brings with him a high degree of wine chemistry and winery operation expertise.
Caldwell received a BS in Chemistry from the University of Minnesota, Duluth campus. He also holds a Certificate in Winemaking from the University of California at Davis. Cameron most recently served as the Director of Operations at BevZero, and is deeply knowledgeable about alcohol reduction in wine, and the development of “No-Alc” flavor profiles.

Winesecrets & Napa Wine Co. Announce Availability of Artisan Scale Flash Détente Technology
Oakville, CA – August 25, 2021 – American Winesecrets, LLC. (Winesecrets), North America’s wine taint mitigation expert has once again partnered with Napa Wine Co., Napa’s leader in high quality, reserve lot custom crush to provide an artisan-scale Flash Détente system at the Oakville crush facility. Flash Détente removes pigments from grape skins instantaneously prior to fermentation. This technique has proven beneficial in reducing the impact of smoke exposure once the wines have completed fermentation. It is has also proven to be effective at making solid wines from low color, low Brix fruit from vintages where maturity is difficult.
Flash Détente streamlines red maceration by rapidly heating must and then cooling it instantaneously in a vacuum chamber. The treatment results in the rupturing of cell walls initiating an efficient breakdown of the structure of the berry. The smoke aromatics are carried off with water vapor in the vacuum. “Flash Detente can provide superior extraction of color and concentration of sugars,” said Eric Dahlberg, Winesecrets’ Founder and President. “This provides vintners with an option if they are concerned about a potential smoke event later in the season,” added Dahlberg. 
The artisan-scale Flash Detente unit is capable of processing up to 1.5 tons per hour of must, and is scaled to treat reserve lots of 3-20 tons. “Our Team and Winesecrets continue to deliver useful tools to Napa’s winemaking community. We could not be more pleased to partner with them by hosting the Flash Detente system.” said Russ Joy, General Manager of Napa Wine Company. Napa Wine Co. plans to host the system for the duration of this harvest season.

Dr. Sitkiewitz holds numerous patents in the fluid purification area. Sitkiewitz received a BS in Chemical Engineering from the University of Wisconsin. He served as a process engineer in fuel technology before beginning his PhD candidacy in Chemical Engineering at the University of Texas at Austin. Upon completion of the advanced degree, Sitkiewitz developed processes for air and water purification including advanced oxidation and photocatalytic purification. Differential Filtration: An Important Advance for the Removal of Smoke Taint from Wine
Winesecrets has developed a new answer to the challenge of removing smoke taint from wine. Differential Filtration (DF) for the removal of smoke taint compounds from wine combines ultrafiltration (UF) and reverse osmosis (RO) to remove both the glycosylated (bound) and free forms of smoke taint compounds. DF represents an important advance over the current use of “RO-only” since using RO alone historically has only removed the free forms of smoke taint.
DF employs three steps within each treatment round:
- UF protects the colloidal and polyphenolic structure of the wine by separating it from low color permeate which contains both bound and free guiacol compounds.
- RO traps the bound smoke taint from the low color permeate while allowing the free guiacol compounds to pass.
- A carbon block array removes the free smoke taint contaminants remaining in the low color permeate. The low color permeate is then reunited with the original high color fraction of the wine.
Two trials using DF at the bench scale (Test Track) reduced guaiacol and syringol, two key markers of smoke taint, by 85% and 91% respectively. Successive runs of DF have shown further reduction of smoke taint markers by a similar order of magnitude. Cellar scale trials showed slightly lower reductions. Runs at both the bench and production scales reduced guaiacol to concentrations below the sensory threshold after two rounds of treatment. It is noteworthy that the bound forms of guaiacol and syringol concentrations were reduced by 83.6% and 77.6% respectively at the Test Track scale; 58.5% and 38.2% respectively at the Cellar scale.
